This was apparently made up by American servicemen in the first world war when they fancied a Tom Collins. They had gin and lemons but no soda – so they used Champagne instead (oh the HARDSHIP)! Don’t forget the obligatory cherry!
Ice and a glug of gin
squeeze of lemon
dribble of simple syrup
4 parts of chilled champagne
Putthe ice and then the gin in the cocktail shaker and add the lemon and syrup. Shake it all well and then put into a chilled flute and then stir in the fizz …heaven ( and still easy after one or two make the world a little fuzzy….and it will!)
