Miranda’s Saturday Kitchen: Old School Baked Apples with Coconut Granita

There’s something so soothing about heading to the kitchen at the weekend.

There’s time to cook, to savour and enjoy and if your house is anything like mine, more of a chance we can all sit together to eat.

Baked apples sound so simple but it’s a real treat and one all of my clan ‘simply’ love!

  • 4 Bramley Apples
  • 60g Coconut oil
  • 20g Flax seed
  • 40g Desiccated coconut
  • 40g Ground almond
  • 80g Golden sultanas
  • I level tsp ground cinnamon
  • 100g Muscovado sugar
  • 200ml Unsweetened Coconut milk

My cheats Granita couldn’t be any easier.  Simply pour the coconut milk into a container and place in the freezer for at least 2 hours.

Pre-heat the oven to 160c.

Remove the cores from each apple and warm the coconut oil gently until it becomes liquid.

Mix all of the remaining dry ingredients together and bind with the coconut oil.

Stuff into the apples where the core was. press down until compact.

Place the apples onto a tray and bake for 45 minutes

Scrape the iced coconut milk until it forms granular shavings

Pop the baked apples onto a plate and serve with the coconut granita!

Enjoy !!
