3 heads of Elderflowers
3 large sprigs mint
200g granulated sugar
Mint for garnish
Boil the flowers, mint, sugar and water until it becomes syrupy. Pass through a sieve and chill the liquid.
Pour 50mls into a glass with crushed ice, fresh mint sprigs and then top with spring water and a squeeze of lime.
Serve with the sunshine (or gin if you’re so willing – it’s delicious!)
